Swiss Meatloaf

I never liked celery in meatloaf. Never got why it was there SO, for that reason, this recipe is adaptable either way. Keep the celery or chuck it. Also, please don’t forget to make mashed potatoes. I have a great recipe for roasted garlic ones that go especially well with this.

Ingredients

  • 1lb Ground Beef

  • 2 eggs

  • 1 packet Lipton Onion Soup mix

  • 1 ¼ cup Italian bread crumbs (-1/4 cup if celery left out)

  • 1 ¼ cup baby Swiss (grated)

  • 1 cup chopped Celery (can leave out)

  • 2 tsp Parsley

  • 1 tsp Lawrey’s Season salt

  • Ketchup to cover the top

Directions

  • Preheat oven 350f
  • Mix all of this together (preferably with hands)
  • Split and put in 2 loaf pans.
  • Cover with Ketchup
  • Bake at 350 for 1 hour.
